Bloomberg today reports a record price of $730.000 paid for a single Bluefin tuna sold at the year's first auction in Tokyo. The buyer was a Japanese restaurant chain, Kiyomura K.K. The previous record was from last year when a Hong Kong sushi chain bought a single Bluefin tuna for $396.000.
This corresponds with a spike in prices Umami has experienced 2011, as portrayed in the company's 11/29/2011 press release on prices and sales.
It also is a sign of increasing competition between Chinese and Japanese customers for Bluefin tuna, but the sushi culture is on a very rapid rise in China as well as the US.
